Baking: Scones

I am pretty sure one of the best things ever is a cup of tea (milk with 2 sugars) accompanied by a fruit scone.
I quickly whipped some up the other day, so thought I'd share it with you.

So to begin you will need:
225g Self Raising Flour
50g Unsalted Butter
1 Egg
25g Caster Sugar
50g Mixed Fruit
A pinch of salt

Cube the butter and add it to the flour.

Rub in the butter into the flour. Do this by literally rubbing the butter and flour between your thumbs and fingers until it resembles breadcrumbs.

Next up, add the caster sugar and fruit.

add the egg

Then mix it up until it looks like dough. You might want to get your hands involved at this point to help form a ball.

If at this stage the mixture isn't sticking together, add a little milk.

Roll your mixture out until it's about an inch thick and then cut out using a circle cutter.

You can brush them with either egg or milk if you wish.

Pop them on a baking tray and put them in the oven at 220 degrees for about 10 mins or until golden brown.

Ta-da, a scone to go with your cup of tea, couldn't be easier. Personally I love to let them cool slightly before adding butter which slowly melts, heaven.

Let me know if you make any!
